At the customer level in their traditional heartland operations, contractors have come to recognise that their customers are no longer locked into using the canteen at lunchtime; instead the staff feeding operation has to compete with the full range of high street offers – Quick Service Restaurants, pubs and restaurants – which are typically an available choice to the workforce. As a result, contractors have increasingly come to mirror their high street competition in terms of ambience, food offer and price.

A prime example of this is the development, over the last few years of the Ritazza brand. Compass originally developed this as in-house coffee offering for selected contracts. It is now widely encountered in public-access locations such as airports and stations.
